Abierto
Wine that expresses its full extent. It is said of one who has spent his entire life.
Abocado
Containing between 5 and 15 gm. per liter of residual sugar. Used to define slightly sweet wines.
Acabado
This wine is ready for bottling. Tasting language applies to wines that are at the end of their evolution.
Acerbo
Wine in which acidity becomes aggressive, resulting sharp on the palate.
Acetaldehyde
A substance that is found in wines that have had some rust. It is the color of stale or ajerezado.
Acetic
Wine has been sour. This defect is usually due to excessive exposure to air.
Acidification
Regulated correction of the acidity of a wine by adding tartaric acid
Acetic acid
Acid produced by acetic acid bacteria. Its concentration marks the volatile acidity of wine. When wine is rough, it's vinegar
Acidulous
Marked acidity. Feels like the taste of green apple.
Agil
We say "agile in glass" to refer to its lightness.
Aggressive
Marked acidity wine, gums irritates us or we parched throat.
Ahilan
Synonym: Viscous. Al served in cup forming wire falls as oil. It came with the disease of fat.

Very light colored soil, rich in calcium carbonate, typical of some regions, like Jerez.

Protein of egg white used for the clarification of wine. It is a very gentle clarifier.

Amber
Yellow to reddish presenting the wines, brandies, whiskeys and rums in the first stage of aging by oxidation.

Ampelography
Science of the vine plant.
Andana
Group barrels stacked on each other.
Antociano
Polyphenol responsible for the red color in red wines.
Añada
Year of the grape harvest.
Añejo
Wine undergoes a process of aging in barrel or bottle, for a minimum of 3 years. Synonym: old wine.
Appetizer
Wine flavored with extracts of plants or by maceration of herbs and spices to taste bitter and has the virtue of stimulating the appetite. Eg Vermouth
Aragon

Arista
Dissonant feeling in the aroma or the passage through the mouth of a wine of low intensity but enough to disrupt their balance.
Aroma
Natural and positive feelings of a wine. They may come from their own grapes (primary aromas), generated during fermentation (secondary aromas) or develop during aging or aging wines (tertiary aromas).
Arroba
What amounts to 16 liters.
Arrumbación
Operations that are performed inside the wineries in Andalusia, as decant, lead and clarify the wine.
Astringent
Sensation of dryness and roughness that we produce
Attack
At a wine tasting the first sensation is perceived.
Attenuated
Adjective to describe the loss of youth and fruitiness of a wine.
Artificial Dyes
Chemicals can alter or enhance the color of wine. Its use is prohibited.
Arbor
Driving strain on wires to increase the quality of the grapes.
Alcoholic Fermentation
Fundamental process by which the wort is converted into wine. 1st is called fermentation.
Aftertaste
Taste left after swallowing or spitting out the wine.
