In addition Chile is one of the few countries in the world that hasn’t been affected by the phylloxera pest. There are three varieties which dominate in its vineyards: Merlot, Cabernet Sauvignon and Chardonnay. It’s worth mentioning that much of what used to be sold as Merlot is actually Carménère, a grape that produces elegant and velvety red wines which has become an identity standard for Chilean wines.
