If Settimo and his father Gino Pizzolato are know for one thing, it is for meeting the expectations of a health-conscious consumer. With an estate covering 58 hectares in the rich and thriving countryside north of Treviso in Veneto (Italy), their grapes and wines are made with a completely sustainable philosophy using green energy and reducing waste in every part of the production process. So much so that Cantina Pizzolato was one of the first wineries to start using organic methods, gaining organic certification in 1991, the same year the certification bodies were set up in Italy. As a result, their organic wines are true expressions of a promise to respect the environment and their surroundings.
One of their best known productions, Pizzolato NSA Prosecco is a sparkling wine from vineyards lying on the plains and slopes near the Piave River. These are vines of the native Glera variety and are planted on stony and permeable soils that allow good drainage. No chemicals are used that could damage the natural balance of the terroir, and once the grapes are ripe, they are harvested and immediately taken to the winery. There, the selected and destemmed grapes are gently pressed, the resulting must undergoes a static racking of 12 hours and fermentation is carried out without the addition of sulphites. A second fermentation then takes place in pressurised steel tanks, using the classic Italian Charmat method for 2 months and reaching a pressure of up to 2.5 atm.
Considering that Cantina Pizzolato produces the best-selling organic Italian wines in Italy, Pizzolato NSA Prosecco is a good excuse to jump right into the world of quality prosecco.
