About Pago de Carraovejas

In 1971, José María Ruiz harboured a dream: to establish his own restaurant where he could also offer his own wines. Nearly two decades later, after much hard work and dedication, his dream came to fruition, and the first wine from this winery emerged under the name Pago de Carraovejas.

From Peñafiel, in the western part of the D.O. Ribera del Duero, José María and his son Pedro continue to devote their heart and soul to this venture, which has become a benchmark in the world of red wine. Within its walls, there is no inferior production, nor a flawed wine, which is only logical given the attention and care the second generation of the winery invests throughout the entire process. Nothing can conceal or disguise the magnificent terroir of this appellation, situated between 700 and 1,000 metres above sea level, where limestone soils with red clays and white marls abound. This mixture, which easily retains water, is crucial in enabling the vineyards to withstand the continental Mediterranean climate, where long, cold winters contrast with dry, scorching summers.

Pago de Carraovejas undergoes a double selection process. The first phase, before the harvest, takes place in the vineyard itself; the second occurs at the winery, where the finest bunches are selected. Throughout its production process, Pago de Carraovejas is moved and transferred by gravity, taking advantage of the winery's different levels. This ensures the highest quality during the maceration and the subsequent racking and transfer to French and American oak vats. In these containers, Pago de Carraovejas will remain for a minimum of 12 months after having fermented. The clarification with natural egg whites and its bottling will be the culmination of this masterpiece.
