

Maduresa is a red wine produced by the Celler del Roure winery in Moixent, D.O. Valencia.
Celler del Roure is a family-run winery that was founded in 1996, with 20 hectares of their own vineyards. They soon acquired 40 hectares more in Serra Grossa, in the region of Les Alcusses. All their vineyards are cultivated organically, and they have had certification since the 2016 harvest.
Since 2009, the current owner of Celler del Roure, Pablo Calatayud, an agronomy engineer by training, has focused on recovering varieties native to the area, such as Mandó or Arco, and returning to the old vinifications in earthenware jars (tinajas) that were so commonly used in the Mediterranean area. His goal is to thus complement their line of wines, where we can find the widely known Maduresa and Les Alcusses.
From the 2016 vintage, Maduresa took a U-turn and began to be produced only with the native varieties Monastrell and Cariñena. From vineyards located at an altitude of 550 meters on sandy loam soils.
The grapes are harvested by hand and placed in 15 kg boxes. Once in the cellar, and after a partial destemming, they macerate for 15 days. Alcoholic fermentation is carried out with local yeasts in stainless steel tanks. Malolactic fermentation takes place in new and used French oak barrels where the wine remains for 12 months.
