About Celler Del Roure Safrà

The mandó is a red grape variety, originally from Bierzo, which for several decades—particularly during ancient times—was cultivated in the DO Valencia and formed the heart of some of the finest wines from this denomination in the southeast of Spain. Today, nearly on the brink of extinction, its revival is the primary goal of Celler del Roure, who produce Celler del Roure Safrà from it. 
 
In the likeness of "ancient wines," Celler del Roure explains that this type of production "is the result of a quest, a journey to the past, to ancient varieties and traditional methods of production," which allows for the recovery of "the subtlety of a cooler Mediterranean, the magic of our moons, and the mystery of ancestral varieties." 
 
Celler del Roure Safrà originates from an old vineyard, over 20 years old, cultivated organically. The harvest is carried out manually, in 15-kilo boxes, resulting in a mandó and arcos that are very distinctive and special, much more vibrant and fluid, which subsequently allows for a winemaking process based on gentle macerations, at low temperatures, with alcoholic and malolactic fermentations in clay jars using native yeasts. At the end of this journey, Celler del Roure Safrà will undergo aging for several months (specifically less than a year) in this same material.
