For some years now, Las Moradas de San Martín, a winery owned by the Nozaleda Arenas family (Enate) has been certified organic. This is just one more example of the important part that quality plays in this company located in the Sierra de Gredos, in San Martín de Valdeiglesias, in the D.O. Vinos de Madrid. Made under this philosophy are wines like Las Moradas de San Martín La Sabina, a red wine made without any sulphur added in any part of the process.
Thanks to wines like this, the D.O. Madrid is no longer unknown, and has been on the up since 1990, when this denomination of origin was granted its status. A lot has happened since then, and from those days, in the case of Las Moradas de San Martín La Sabina, only Las Moradas de San Martín La Sabina remains. This was the first wine made by this winery, where they are experts in Grenache and where the vines are grown at an altitude of 900 metres above sea level on granitic, rocky, dry soils. This type of soil, which is common in this corner of southwest Madrid, is the best home for this variety, which in this context reveals its most elegant and individual side. In total, Las Moradas de San Martín has 21 hectares that are divided into different plots, each with very specific characteristics, which will be used for one wine or another. When it comes to Las Moradas de San Martín La Sabina, the grapes come from Montonazo, Boquerón and Centenera, plots lying at an altitude of 900 metres above sea level on granitic soils of sand and rock. Growing here are old Grenache vines (the area’s typical variety), enjoying a continental climate, with strong northwest winds and 470 to 540 mm rainfall a year on average.
From this unique terroir, located in the southwest of Madrid, emerge unique wines. For this reason, Las Moradas de San Martín La Sabina is cultivated and produced in a completely manual and artisan way, maintaining respect for the raw material at all times. The first step begins in the vineyard, where the grapes are harvested by hand, at night, with great care, avoiding breaking the berries and oxidising the must. From there Las Moradas de San Martín La Sabina is taken directly to a selection table, where only the best bunches are selected. After destemming, where the stems are removed, the grapes are placed in stainless steel tanks where they undergo fermentation. This process is completely spontaneous and natural, using native yeasts, and will last about three weeks.
Once malolactic fermentation is complete, it is time for aging, where Las Moradas de San Martín La Sabina spends an average of 14 months in used 500-litre French oak barrels. After this time, Las Moradas de San Martín La Sabina is blended and bottled without filtering or clarifying.
They make about 80,000 bottles of Las Moradas de San Martín per year. A small number of these are Las Moradas de San Martín La Sabina. Undoubtedly an opportunity not to be missed.
