Books and wines. A strong partnership that has been going for a long time. Nothing can separate them. Nothing can beat them down. And this is something they know well at Las Moradas de San Martín, a winery located in the Sierra de Gredos (Madrid). For this reason, each of their bottle labels is a small excerpt, written by local authors like Luis Zueco, who have put words to Las Moradas de San Martín Senda.
Mountains and organic viticulture are the pillars of this red wine, cultivated in old vineyards that grow in four different plots: Panaderos, Corzos, Boquerón, La Coja and Ponientes. All of them are located in San Martín de Valdeiglesias, one of the four zones into which the D.O. Vinos de Madrid is divided. In this corner of rugged terrain in the southwest of the area, Garnacha Tinta vines are grown at an altitude of 870 metres above sea level, on granite gravels and in a continental climate (with the highest rainfall). Where these three factors work together, the Garnacha Tinta finds a home, becoming a very productive and easy to grow variety.
The Las Moradas de San Martín Senda harvest is carried out manually, in small boxes, and the grapes are taken to the winery. There they are selected, ensuring that the quality that has been so carefully cultivated in the vineyards (organically grown) is maintained. From there, the Las Moradas de San Martín Senda clusters are destemmed and transferred to stainless steel tanks, where the grapes from each plot ferment separately, in contact with their seeds and skins. During this time, the skin will slowly release pigments during the process, giving Las Moradas de San Martín Senda its characteristic colour. For this purpose, Las Moradas de San Martín will also make use of very gentle pump-overs, which will be carried out at the same time as the yeasts are working.
Once this process is completed, Las Moradas de San Martín Senda will be transferred to French oak barrels where it will be aged for ten months. After this time, it’s the moment of truth: assembly. During this step, where the true soul and essence of the wine is at stake, a team of experts decides what percentage of each plot should be used in each vintage. Finally, Las Moradas de San Martín Senda is bottled without filtering or clarifying, relying on time and the force of gravity to clean the wine.
