The grapes for Casa Castillo Cuvée N Viñas Viejas come from the upper part of the Las Gravas vineyard, planted in 1981. It is a north-facing vineyard, at the foot of the Sierra del El Molar, at a height of about 720 metres above sea level. The vineyard is bush-trained and is dry farmed. Its sandy loam-sandy soil is fantastic for cultivating the vine since it avoids the formation of puddles.
To produce Casa Castillo Cuvée N Viñas Viejas the bunches are fermented whole, without destemming. The fermentation takes place in underground winepresses and is carried out spontaneously; i.e. the yeasts that ferment the sugar in the grape are the grape’s won ones, and commercial yeasts are not added for fermenting. Once the alcoholic fermentation is finished, the malolactic fermentation takes place in French oak barrels. Lastly the wine is aged for 19 months in very used French oak barrels so that the wine can finish evolving but without being influenced by the provision of new wood.
Casa Castillo Cuvée N Viñas Viejas is a wine that has great ageing potential. Stored in optimal conditions, it can be consumed until 2029.
