Bodegas Baigorri was born with a conviction for modernity, and from its beginnings they have never doubted what they want, what they can offer and how to offer it. This is where its progression and its success comes from. Today, their wines are an example of the most recent values in La Rioja; a blend of terroir, fruit and elegance.

More about Baigorri

Although Bodegas Baigorri does not have a century-old history, its founder, Jesus Baigorri, is one of those people who has always been linked to the Rioja wine industry. Son of winemakers and heir of a small business in Villanueva (Álava), Baigorri. After a long pilgrimage through many wineries around the world, he started his most personal project with the now deceased renowned architect Iñaki Aspiazu, at the beginning of the new millennium in Samaniego (Álava), in the Rioja Alavesa. Here they created a unique winery based on its architecture, which needed to be as important as their wine.

Currently, and since 2007, Pedro Martínez Hernández is its owner. Among many other things, he invested in an R&D department and promoted a more international projection of its wines to other countries of Western Europe and Asia.

History of the winery

We don't have to go back many years, only to 2001, to realise how the project was conceived and carried out. A project that was so original in an area as traditional and emblematic as the Rioja.
Jesús Baigorri, promoter of the project, and architect Iñaki Aspiazu, aimed to create a modern winery with an architecture based on essentially oenological criteria. The project is based on favouring the natural handling of grapes and the wine throughout the whole production process, avoiding the use of pumps or mechanical means that could alter their properties. This involved designing a vertical building, which would allow transport to be carried out by gravity.

Bodegas Baigorri is located in Samaniego, near the A-124 road. From the outside you can only see a glass cube, covered with a zinc roof, and raised on a concrete base lined with wooden sheets. This 400-square-metre urn is located at the top of a hill that slightly slopes towards the opposite side of the road. At the same time it acts as an entrance hall and viewpoint, with beautiful views of the vineyards of the area. It is also surrounded by a pond designed as a fire water tank.

From this point, the winery facilities are arranged in six levels below this singular space, and they reach 30 metres of depth.
On the first level we can find the offices, an oenology shop, a tasting room, a multifunctional space for events, and the laboratory, divided into a research section and conventional analysis area.
On the upper level they receive the grapes from the harvest; on the lower level the vinification process is carried out in deposits, and on a third level, the ageing in barrels is performed.
This way, the wine is transported thanks to its own weight, avoiding the use of pumps to preserve the qualities of the fruit to the maximum extent.

The winery has truncated cone-shaped stainless steel deposits, as well as four French oak vats in which the highest-quality wine from the winery goes through the alcoholic fermentation. The ageing warehouse has automatic temperature and humidity control, and houses around 3,000 barrels, 90% of French oak, 8% o American oak, and the rest of other varieties in an experimental stage. The warehouse also contains six huge French oak foudres to carry out coupages.

Work philosophy

Another key point of the quality of their wines, and not less important than the winery, is the high-quality raw material. It comes from its 100 hectares of vineyard, with an average age of 50 years, where they apply sustainable cultivation and an extensive selection task.
Of these 100 hectares, 25 are owned. Regarding the rest, they control more than 100 winegrowers, so the average per farm is around 3 or 4 hectares. The harvest is always manual and a double manual selection is carried out on selection tables. First go the bunches and then, the berries, to ensure the use of only the most healthy grains and those that are in the best possible conditions.

On the other hand, after a period of engineering study on consumption patterns, the energy manager performs a monitoring stage in which he measures, monitors and acts in real time to correct consumption deviations. This platform also has an artificial intelligence system to predict the energy behaviour of the winery and consequently increase the saving potential.
The monitoring of consumption is focused on all the stages of wine production, among which special attention is given to fermentation, bottling, storage and shipping, which account for more than half of the energy bill. It is a true technological challenge, since it offers a real-time solution that achieves savings ranging from 30% to 40% of the energy bill. It also allows for a predictive maintenance of the equipment, as well as a distribution of costs by units of production.
This conviction of Bodegas Baigorri for energy efficiency is a strategic step in its investment trajectory in sustainable growth projects. This allows them to achieve healthier and more functional wines, and consolidate itself as a reference in the world of oenology, especially in the environment of La Rioja Alavesa.

Also, Bodegas Baigorri is immersed in a research project with French, Portuguese and Italian wineries. Each one has selected local yeasts, so Baigorri selects its own yeasts from the plots where the vines are, totally discarding the use of chemical or industrial yeasts.

Wines from Bodegas Baigorri

The wines from Bodegas Baigorri comprise an extensive catalogue. Red, white and rosé wines ranging from carbonic maceration to the B70, made from grapes from old vines that are over 70 years old and aged in barrels for 22 months.

Baigorri Blanco Fermentado en Barrica
is made from Viura and Malvoisie. The fermentation and ageing are performed in new French oak barrels, with their lees, undergoing regular batonnages for 8 months. Its aromas stand out thanks to the ageing in barrels, with its lees. Fruity and balsamic sensations excel; unctuous, elegant and complex, long and with an intense finish.

Baigorri Rosado is made with Tempranillo and Grenache. It is fermented with local yeasts specially selected at a low temperature in stainless steel deposits, together with the lees. It is intense on the nose, with fruit aromas of bananas, pear, pineapple and jelly beans that stand out. In the mouth it is tasty, soft and very balanced.

Baigorri Maceración Carbónica is made in the old style, partly with whole bunches and partly with destemmed berries of the Tempranillo variety. The cooled bunches go through pre-fermentation maceration, a short fermentations in stainless steel deposits, in combination with the traditional stomping of the bunches. Its fruity aroma of blackcurrants and blackberries stand out. On the mid-palate it is pleasant, with prevailing notes of liquorice and "Juanola" herb sweets.

Baigorri Crianza is made with Tempranillo and Grenache grapes, and other small percentages of other local grapes. It is aged for 14 months in French and American oak barrels. Aromas of black and compote fruit, spices, dairy and a long retronasal pathway. In the mouth it is elegant and silky.

Baigorri Reserva is made with Tempranillo, from old vines with low yields. Long macerations in stainless steel deposits and wooden vats. Natural pump-overs by gravity. Malolactic fermentation and ageing for 18 months in new French oak barrels. Aromas of black and compote fruit, spices, dairy and a long retronasal pathway. In the mouth it is elegant and very balanced. Long and with an intense finish, persistent on the palate.

Baigorri Belus is made with Mazuelo, Tempranillo and small percentages of local grapes, selected by hand, berry by berry, using selection and vibration tables. Destemmed grapes without crushing macerated in special deposits with temperature control and long intracellular fermentations. This wine is aged for 14 months in new French oak barrels. Intense red fruit with great complexity and harmony, with shades of black olives. In the mouth it is unctuous, elegant and persistent on the palate.

Baigorri Garnacha is a varietal that comes from very old, low yield vines. It is aged for 14 months in new French oak barrels. It offers intense floral notes and notes of red fruit, with great complexity and harmony of nuances. In the mouth it is unctuous, elegant, immersive. It has a great expression with a long and mineral finish, persistent on the palate.

Baigorri de Garaje is made from very old Tempranillo vines with low yields, with long maceration and fermentation in wooden vats. Aromas of compote fruit, aromatic herbs, bread and figs. Sensations of macerated fruit, prunes, tobaccos and smoke, and liquorice. Very tasty and round, with balance between the tannins of the wood and of the grapes. Very long and lingering finish

Baigorri B70 is a wine made from very old vines of more than 70 years cultivated on small plots in the Sierra de Cantabria. Grapes of the Tempranillo variety selected by hand, berry by berry, using selection tables by vibration and gravity. Separate production in 600-litre open barrels. Then the "vino de lágrima" (free-run juice) is separated, only using the wine from the restomping the grapes. Malolactic fermentation and ageing for 22 months in new French oak barrels of extra-fine grain. Wine with aromas of ripe fruit with mineral nuances. Elegant, round, with balance between the tannins of the wood and of the grapes. Very long and lingering finish.
