Thomas Perseval Le Village is a biodynamic sparkling wine made from the Chardonnay variety by Thomas Perseval in the French denomination of AOC Champagne (France).
Three generations have worked on a small 2.5 hectares estate in Chamery. The first generation, in 1970, focussed on growing vines and grains, the second, in the 1980s, began to make their own wine and the third, represented by Thomas Perseval, chose a more natural approach with organic certification in the vineyard and minimal intervention in the winery. He puts hard work into the production process to achieve the purest expression of the fruit.
Thomas Perseval Le Village comes from vineyards planted in 1986 on clay and limestone soils. These vines have been cultivated according to organic principles since 2003 and certified organic since 2012. No systematic products are used, instead opting for biodynamic treatments made from plant compounds and infusions. The work is completely manual and the harvest takes place at the optimum point of ripeness.
The resulting must from the Thomas Perseval Le Village grapes ferments spontaneously with native yeasts in enamelled tanks and used 225 and 400 litre oak barrels. It is bottled unclarified and unfiltered and aged for 48 months. Finally, the wine is disgorged without dosage (Brut Nature).
A member of the “Champagne growers” movement, this young winemaker is committed to showcasing the maximum expression of the terroir. All this work is reflected in Thomas Perseval Le Village, a creamy, bubbly and deliciously mineral sparkling wine.
