Thomas Perseval Tradition Extra Brut is a biodynamic sparkling wine made by young vigneron Thomas Perseval from the Chardonnay, Pinot Noir and Pinot Meunier native varieties in the AOC Champagne, in the Champagne region of France.
As the third generation to work the family’s 2.5 hectares of vineyards in the village of Chamery, Thomas Perseval goes one step further than his grandfather and father and has converted the entire estate to organic. Following the influence of the new Champagne winemakers who champion the purity of the terroir with their bare hands, he manages to produce authentic, direct sparkling wines that are full of personality.
Thomas Perseval Tradition Extra Brut comes from vineyards that the family has owned since 1970 in the heart of the Montagne de Reims natural park. The vines are planted in sand, clay and limestone soils and have been organic since 2012. In addition, biodynamic agriculture is practiced with herbal treatments and infusions. The harvest is carried out manually at the optimum point of ripeness.
In the winery, the must made from the Thomas Perseval Tradition Extra Brut grapes ferments spontaneously with native yeasts in used oak barrels. It then undergoes a second fermentation in the bottle without filtering or clarifying and is aged for about 5 years in the cellar. Finally, the traditional “dégorgement à la volée”, i.e. disgorgement by hand, is carried out.
Thomas Perseval Tradition Extra Brut is a sparkling wine that demonstrates the great work being carried out by the new generation of vignerons in the Champagne region. A direct and pure Premier Cru champagne.
