Thomas Perseval La Pucelle Blanc de Noirs Millesimé is a biodynamic sparkling wine produced by the young winegrower Thomas Perseval in the AOC Champagne, in Champagne (France) with the native Pinot Meunier and Pinot Noir varieties.
In 2003, the third generation Perseval took on the small family estate in the town of Chamery, in the heart of the Montagne de Reims natural park and embarked on a new era of biodynamic and ecologically certified champagnes. This has earned Thomas Perseval a reputation as an intrepid young champion of native varieties and of the most authentic expression of this unique location and its vintages.
Thomas Perseval La Pucelle Blanc de Noirs Millesimé comes from a unique plot called “La Pucelle”. A Premier Cru with vines that have been certified organic since 2012 and are planted on clay, sand and lime soils. They are cultivated manually using biodynamic agriculture with plant-based treatments and infusions.
The Thomas Perseval La Pucelle Blanc de Noirs Millesimé grapes are harvested and then destemmed and cold macerated on the skins for 10 hours. The grapes are then gently pressed and the resulting must ferments spontaneously with native yeasts in stainless steel tanks and ages for 8 months in 225 and 400 litre oak barrels. Finally, it is bottled unfiltered and unclarified and spends 45 months in the bottle before disgorging. No sugar is added.
