

Plato, one of the founders of Western thought and science, said, “Everything that comes about through necessity has a cause; for without a cause nothing has an origin.” And following a philosophy of creating the best viticultural heritage of the Toro Denomination of Origin, Máximo San José de la Rosa set up his Divina Proporción project in 2009. A new generation family winery that exists to express the typicity of the Tinta de Toro native variety, accompanied by an attractive presentation and a very accessible price.
With 30 hectares of their own vineyards and 100 hectares of vineyards owned by local winegrowers, the vines are located around the winery, in a true Bordeaux château style, so that the grapes arrive healthy and safe at the winery during the harvest thanks to its proximity. Organic, sustainable and organic principles are rigorously followed and their Plato wine is made with old Tinta de Toro vines that are over 100 years old. Once in the winery, the best berries are thoroughly selected, destemmed and crushed to begin fermentation and maceration in stainless steel tanks at controlled temperatures. The wine is then transferred to oak barrels where it undergoes malolactic fermentation and is aged for about 20 months.
This is how Plato presents itself. A top wine that was born for a very good cause, to give visibility to a groundbreaking and modern Tinta de Toro wine but without forgetting the tradition and culture that marks the D.O. Toro so much.
Plato 2019 is a concentrated red wine with aromas of red and black fruit accompanied by notes of toffee, undergrowth, cedar, coffee and cocoa. On the palate it is complex, powerful and well structured. A medium to full-bodied wine with unctuous tannins, a liqueur sweet aftertaste and a long, lingering finish.
