Peraj Ha'abib is a Kosher red wine made by the Celler de Capçanes winery in the D.O. Montsant.
It is a cooperative winery located in the municipality of Capçanes (Tarragona).
Peraj Ha'abib is a Kosher wine, i.e. a wine suitable for consumption by the Jewish community. In Hebrew law, wine has great importance and meaning, which is why it requires a very specific preparation.
The most important thing is that the whole process of winemaking must be carried out by Jewish people; a rabbi with the necessary skills personally supervises the winemaking and intervenes when necessary, following the guidelines of an oenologist who under no circumstances can come into contact with the wine.
In addition, all the raw materials used are Kosher certified and are used only for the production of this type of wine.
Peraj Ha'abib is made from the Grenache, Cabernet Sauvignon and Cariñena varieties. Grenache grapes come from very old vines of between 50 and 70 years old. All the vineyards are planted in terraces, at about 500 meters of altitude on clay and granite soils.
The harvest is carried out entirely by hand.
Regarding preparation, the must ferments at a controlled temperature of between 24 and 28ºC over a period of 28 days. All the varieties are vinified together. The malolactic fermentation begins in steel tanks and ends in barrels.
After the winemaking Peraj Ha'abib is aged for 12 months in new and one year old Kosher French oak barrels. Lastly, before being marketed the wine stands for 3 months in tanks to finish refining.
Peraj Ha'abib has a high Kosher certification. It is not pasteurized (Lo mebushal) and is suitable for Jewish Passover (Le Pessaj).
Peraj Ha'abib is a benchmark for Kosher wines, and vintage after vintage has received good reviews from specialist critics.
