

La Flor del Flor de Primavera is a kosher red wine made by Celler de Capçanes winery in the D.O. Montsant, complying with all the regulations for the production of certified Kosher goods.
The wine is made under the strict supervision of Barcelona's Chabad Jewish Community's Rabbi. The vines used to make kosher wine must be at least 4 years old and every 7 years the vines must be left to rest and not be harvested. Hebrew law requires strict hygine, like for example the triple washing of the stainless steel tanks (fermentation in wood is not allowed). No one unauthorized by the Torah is allowed into physical or even visual contact, with the wine. Not even the winery's oenologist. During the production process, the Rabbi becomes the hands and eyes of the oenologist.
La Flor del Flor de Primavera is a Grenache single-varietal made from 80-95 year old vines. The grapes are picked by hand.
They ferment for 28 days at a controlled temperature between 24 and 28ºC. Malolactic fermentation begins in tanks and finishes in barrels. After a light filtration, the wine ages for 12 months in new French oak barrels, medium and lightly toasted. It is then left to rest for 3 months in tanks before being bottled.
Flor del Flor de Primavera is an excellent wine made from old vines, with a fresh, elegant and delicate personality.
