Parxet Brut Reserva Ecológico is a dry sparkling wine (less than 12 g/L). Delicate and fruity on the nose. The palate is broad with personality and volume. Very fine and persistent bubbles with a tendency to form a crown of foam.
Parxet, a name derived from the French word parchet, which means “small portion of vineyard”, is the perfect name for a farmhouse in the town of Tiana (Catalonia) where the Suñol family has been making wine following the “Champagnoise” method since 1920. A winery with a view to the future that in its early days was probably the first to use stainless steel tanks in Catalonia and today continues to be at the forefront to remain a benchmark within the D.O. Cava.
With a total of 200 hectares of vineyards where the varieties planted are mainly Pansa Blanca, Macabeu and Parellada, they produce sparkling wines like Parxet Brut Reserva Ecológico, a cava made from a coupage of these three varieties. The vines are planted in the area’s characteristic sandy-textured soil called “sauló”, which has good drainage to prevent the must from being watered down, and all the work is 100% organic. Following a manual harvest, the grapes are pressed whole and the must ferments at a low temperature in stainless steel tanks. After blending the different base wines, a second fermentation is carried out in the bottle in the traditional style with a minimum aging of 24 months. Finally, the disgorging happens and the necessary expedition liqueur is added to create a balanced brut.
With the personality provided by the Pansa Blanca, a variety native to the D.O. Alella (Catalonia), Parxet Brut Reserva Ecológico is an organic reserve cava that is full of identity.
