About Pardas Blau Cru

Pardas Blau Cru is a white wine produced by Celler Pardas in Torrelavit, D.O. Penedès.

In 1996, Ramon Parera and Jordi Arnan initiated the Pardas project with the aim of crafting the finest wines possible from the Can Comas estate, an abandoned property featuring forests, wastelands, dryland crops, and pastures. It wasn't until 2004, once the vineyard was established and balanced, that they vinified their first harvest.

Nestled between 200 and 300 metres above sea level, Finca Can Comas boasts a rich diversity of soil types, with an irregular, warm, and semi-arid Mediterranean climate. For vineyard cultivation, sustainable and minimally interventionist agriculture is employed (the winery refers to it as "non-cultivation"): the use of herbicides, insecticides, and synthetic products is avoided. Moreover, the soil is not tilled to prevent erosion and spontaneous cover crops are used for protection.

Pardas Blau Cru is crafted using Malvasía. Hand harvesting, destemming, and maceration for 6-7 hours. Fermentation at 16°C with periodic battonages, lasting 20 days.
