Menade Verdejo

Menade Verdejo is an ecological white wine from Rueda made by Bodegas Menade, a project of the Sanz brothers established in 2005. This cellar also part of the Sitios de Bodega group.

Menade Verdejo is made from 100% Verdejo grapes from vineyards between 18 and 30 years old. The vineyards are grown organically, for treatment herbal teas or whey are used instead of more invasive chemicals. Also an organic fertilizer rather than minerals are used.

For the production, 3 harvests are carried out, one when the grapes are underripe, once in the daytime , done manually, and finally one by night by mechanical technique. These types of harvests are done according to the soil composition and performance management.

When the grapes are collected, a blanketing under dry ice (-80 ° C) carried out immediately before the grapes are pressed, excluding the process of adding sulfur dioxide.

Alcoholic fermentation takes place in stainless steel tanks with wild yeasts (from their own vineyard) at 18 ° C and 22 ° C. Later the wine matures with its lees for a short time Finally, it is clarified with bentonite and stabilised naturally.
