About 4 Monos La Danza del Viento Molino Quemado
La Danza del Viento Molino Quemado is a red wine produced by the winery 4 Monos Viticultores in Cadalso de los Vidrios, D.O. Vinos de Madrid.
4 Monos Viticultores is the project of Laura Robles, Javier García, David Moreno and David Velasco. These four friends from Madrid decided to start making their own wines, taking advantage of the orography of the mountain range Sierra de Gredos and being aware of the importance of having good vines to produce a high-quality wine. The first vintage, from 2010, was already a great sign. Now, their wines get even more recognition year after year.
4 Monos Viticultores cultivate their vines with utmost care, with a vine growing process that respects the environment, avoiding the use of herbicides, and using organic manure when necessary. This is the only way in which their wines can express the pureness of the variety and the character of the terroir.
La Danza del Viento Molino Quemado is a wine made from Grenache , from one single plot, El Canto de las Brujas, more specifically from the site Molino Quemado. In San Martín de Valdeiglesias we find this vineyard that is over 75 years old, located at 750 meters above sea level on sandy soils with granite and gneiss outcrops on granitic rock.
Harvesting is carried out manually, selecting the grapes in the vineyard. Once they arrive at the winery, 20% of them are destemmed. After this, they go through maceration and cold spontaneous fermentation with indigenous yeasts in stainless steel deposits for 50 days. Once the fermentation has finished, it is aged for 13 months in 300 and 500-litre French oak barrels.
