Jacques Lassaigne Millesime is an organic champagne made by Jacques Lassaigne with the Chardonnay variety in the A.O.C. Champagne (France).
Champagnes from the Jacques Lassaigne French winery have showcased the terroirs of Montgueix, in the Champagne region, like no other. Emmanuel Lassaigne and his two sons work a total of 4.5 hectares of vineyards through their absolute respect for nature and in a way that highlights the personality of each of the terroirs. As a result, they produce authentic sparkling wines with exquisite minerality.
Jacques Lassaigne Millesime comes from a small vineyard aged over 55 years old lying on a calcareous hill. No pesticides, fertilisers, or synthetic products are used. Instead, they use ecological agriculture with grass growing between the rows of vines to reduce the levels of nitrogen in the soil. The yield is limited to 60 hl/ha and the harvest is manual.
In the winery, the Chardonnay grapes used to make the Jacques Lassaigne Millesime champagne are gently pressed and the resulting must is fermented in stainless steel tanks. A second fermentation takes place in the bottle, stacked for 96 months. Finally, disgorging is manual, without adding any sulphur or dosage.
