About Jacques Lassaigne La Colline Inspirée
Jacques Lassaigne La Colline Inspirée is an organic sparkling wine made in the A.O.C. Champagne (France) with the Chardonnay white variety by Jacques Lassaigne.
Emmanuel Lassaigne is a small producer who carefully works the vineyard and the soil and makes “authentic” Champagne wines. A vigneron who has showcased the French area of Montgueux like no one else. Despite not being labeled as eco, bio or natural, he enjoys a great reputation among producers who are committed to minimal intervention.
Jacques Lassaigne La Colline Inspirée comes from a small vineyard in Montgueux. A total of three 50-year-old plots planted on calcareous soil that are cultivated with absolute care to achieve maximum expression of the terroir. No chemicals are used, the yields are limited and the harvest is manual.
In the winery, Jacques Lassaigne La Colline Inspirée firstly undergoes alcoholic fermentation and then a complete malolactic fermentation in barrels for 12 to 24 months. Finally, it spends about 18 months in the bottle before disgorging.
Jacques Lassaigne La Colline Inspirée is a champagne with Burgundy influences. A very fresh and mineral Blanc de Blancs cuvée.
