About Dominio de Valdepusa Cabernet Sauvignon
Dominio de Valdepusa Cabernet Sauvignon is a red wine produced by the Marqués de Griñón winery in Valdepusa, which became the first 'Denomination of Spanish countryside' in 2002. The Marqués de Griñón winery is located in the town of Malpica de Tajo, Toledo.
As the name suggests, this white wine is a varietal Cabernet Sauvignon. Its grapes come from vineyards planted in the early 70s, about 450m above sea level on clay soils with good drainage.
The vineyards support a continental climate, with large temperature contrasts, a very cold winter and a dry, hot summer. These temperature fluctuations help a correct ripening of the grapes.
For processing the grapes are destemmed and moved by gravity to stainless steel tanks where fermentation takes place.
After the fermentation, maceration lasts between 4 and 5 weeks.
Dominio de Valdepusa Cabernet Sauvignon undergoes aging in new French oak barrels for 12-15 months.
