Dominio de Tares Baltos is a red wine from Bierzo. It is made by Dominio de Tares, a winery located in the Alto Bierzo, northwest of Leon.

Dominio de Tares Baltos is a single variety of Mencia. The grapes come from vines over 40 years old with a low production. The vineyards are planted on the slopes of Cabanelas, facing south at an altitude of 500 metres.

Its soil is clay-calcareous shale with ferrous elements. To prepare Domain Tares Baltos, the harvest is done by hand made in boxes of 15kg during the second half of September.

The fermentation is done at a controlled temperature of 29 ° C for 10 days. Once vinified, Dominio de Tares Baltos is aged for 4-7 months in French and American oak, with 1-3 previous years of use.

Dominio de Tares was a winery that entered the new national wine scene in the first years of this century, as it is a distinct reference of the modern Bierzo wines. Pioneer in the production of quality reds in El Bierzo, its Dominio de Tares Cepas Viejas was the wine that best identified the singularity of the Mencía variety. From its first harvest, it placed D.O. Bierzo on the map of emerging areas with quality wines.

Bierzo wine is on the rise. It is a region defined by its small scale work, with plots scattered around, very old vines, artisan work of the small scale wineries, and the character of their principal variety, the Mencía grape, which produces fresh, fruity and delicious wines. Although the region is well known mostly for its red wines, it also produces white and rosé wines. If the red wines here are defined by the Mencía variety, then the white wines here are defined by the Godello. Godello grape has great aromatic potential, as well as an excellent balance between alcohol and acidity.  Despite the great potential of El Bierzo, its rise in the wine world would not have been possible without two people: Raúl Pérez and Ricardo Pérez. Two great winemakers who in little time have been able to produce critically acclaimed wines from the Bierzo region.
