The winery is integrated within the group Dominio de Tares, which is currently comprised by Dominio de Tares in El Bierzo, Dominio DosTares in León, and Pazos de Lusco in Rías Baixas. This project was created by many entrepreneurs from El Bierzo, Asturias, Madrid and Galicia, wine lovers and passionate about the grape varieties of Northern Spain, those that are not so well-known and with great potential, convinced that the best wines are always born from a specific terroir . Their dream has always been to showcase the local varieties and to contribute to a greater knowledge of the area and its terroir.

The winery Dominio de Tares was founded in 1999, coinciding with the launch of D.O. Bierzo itself. The first vintage of the winery was launched on the market in 2000, and it was a resounding success. Consequently, the winery became one of the pioneers of the area in showing the potential of its wines and the virtues of the local Mencía variety.

From its early days, the purpose of the winery Dominio de Tares and its creators was to show the world the quality of their wines through their vineyards, as the winery's team has always believed in the enormous potential of the lands of El Bierzo. From the beginning, he chose this region, and he decided to acquire the best farms, his own and leased, with the varieties Mencía and Godello. These old vineyards are the key to their wines, and the winery has been acquiring them until they have reached 30 hectares. Here, most of their vines are between 40 and 90 years old. They are concentrated in Bierzo Bajo, in the surroundings of Valtuille, Villadecanes and Parandones, as well as on the hillsides of San Lorenzo, Otero and Salas de Los Barrios in Bierzo Medio, and on the hills of San Román de Bembibre in Bierzo Alto. In 2001 they had already chosen seven farms where the Mencía variety best expressed itself. A farm with very old vineyards with deep roots that allow the vine to feed from the subsoil, searching for this complicity between the plant and the terroir. Each of these farms was cultivated according to their specific needs.

Work philosophy

Both in the vineyard and in the winery, Dominio de Tares applies natural methods oriented towards achieving wines with personality. To do this, they follow a meticulous cultivation plan that combines the traditional knowledge of the winemakers of the area with the most current soil analysis and phytosanitary concepts. To achieve optimum production and ageing conditions they reduce the load of each vine, with green pruning and thinning of bunches. The traditional tilling replaces herbicides and they apply treatments on the plants only when they are essential, so they can be respectful with the ecosystem.
The harvesting is also carried out in stages, depending on the degree of ripening of the grapes. They are collected in 15-kg boxes to avoid breaking the berries. Once they arrive at the winery, the grape bunches go through a selection table, where only the best will continue to the winemaking process.

They currently have 900 barrels, a third part of which is renewed every year. These are made from French, American and Central European oaks of fine grain and different roastings, chosen among the most prestigious cooperages. Depending on their origin, the wines remain in the barrel between three months and two years, and they are bottled without filtering.

Bodega Dominio de Tares has a young, enthusiastic work team that enjoys its wines. This team is a reflection of the passion they have for their land. Rafael Somonte is currently the technical director of Grupo Bodegas Dominio de Tares. He is truly passionate about viticulture and oenology, providing his youth and wisdom.

Wines from the winery Dominio de Tares

Although they also produce a white wine with Godello, the wines from the winery Dominio de Tares are based on the Mencía variety, native of El Bierzo and with a great personality.

Dominio de Tares Godello.
It is a varietal wine and the only white made by the winery. A very special wine made from Godello grapes, from vineyards that are 15 years old, harvested by hand, bunch by bunch, and fermented with its own and added yeast. It is aged for 6 months in 500-litre French oak barrels, with a minimum of 3 more months in the bottle. It has a marked personality thanks to its ageing in French oak, with aromas of citrus fruits, white fruit, stone fruit and bakery nuances. In the mouth it is dense and balanced.

Baltos. It is the youngest red made by the winery. It is made with Mencía grapes from 40-year-old vineyards, harvested by hand, bunch by bunch, and fermented with its own natural yeast. It spends four months in the barrel, and another 6 months in the bottle before it is launched on the market. It has an intense ruby ​​colour, fresh on the nose with red and black fruits, nuances of liquorice, clove and undergrowth. Intense and warm on the palate.

Dominio de Tares Cepas Viejas. The winery's flagship wine. It is born from the Mencía grape vineyards, which are over 60 years old. Grapes are harvested by hand, bunch by bunch, and fermented with their own natural yeast. It is aged for an average of 9 to 12 months in French and American oak barrels. It has an intense cherry red colour, aromas of red and black fruit jam, nuances of bakery and roasted nuts, with a polished palate, very balanced and with a lot of body.

Bembibre. A wine that speaks for itself. A tribute to the origins of the winery, located in San Román de Bembibre, and to the region of El Bierzo. It is born from 80-year-old vineyards and 110-year-old pre-phylloxera vines. Grapes are harvested by hand, bunch by bunch, fermented with their own natural yeast. This wine is aged for 16 months in French and American oak barrels, spending 24 more months in the bottle. For the winery, it is one of the best expressions of the Mencía grape. Only around 2,000 bottles are produced per harvest.
It has an intense maroon colour, with aromas of red and black fruit jam, and nuances of prunes and toasted nuts. Dense, polished and warm palate.

Dominio de Tares P3. This is a single-vineyard wine, more specifically from the vineyard of San Carlos, with non-grafted pre-phylloxera vines that are110 years old. Grapes are harvested by hand, bunch by bunch, and fermented in 600-litre rotofermenters with their own natural yeast. This wine is aged for 16 months in new French oak barrels, spending 24 more months in the bottle. It has an intense maroon colour, with aromas of red and black fruit jam, plums, liquorice, tobacco leaf and toasted almond, with a powerful, polished and warm palate.
