Domaine Valette Pouilly-Fuissé Tradition is a natural white wine made by Maison Valette with the Chardonnay variety in the AOC Pouilly-Fuissé, in the Burgundy region (France).
One of the first in the area to leave the local cooperative and start bottling his own wines, Gérard Valette founded Domaine Valette in 1977. The winery is located in Chaintré, a small town on the border between Mâconnais and Beaujolais whose wines are known for their specific style, wines aged with meticulous contact with the lees and without racking. In 1990, his son Philippe joined the project, converting the vineyards to organic and placing his complex and flavoursome white wines in a category of their own.
Domaine Valette Pouilly-Fuissé Tradition comes from their own vineyards that are cultivated without any chemical treatments to showcase the maximum expression of the terroir. To do this, they take into account the microbiological life in the vineyard and only use organic and biodynamic treatments. The harvest is carried out manually at the optimum point of ripeness.
In the winery, Domaine Valette Pouilly-Fuissé Tradition is vinified in the most natural way possible, fermenting spontaneously with the grape’s native yeasts, without chaptalisation or acidification. The wine then ages in used French oak barrels for 24 months.
Domaine Valette Pouilly-Fuissé Tradition is not a typical Burgundy white wine. Its complexity, flavour and power make it a fascinating wine that is difficult to categorise.
