Conca d'Oro Valdobbiadene Prosecco Brut is a sparkling prosecco wine made by Fattoria Conca d'Oro with the Glera variety in the DOCG Valdobbiadene Prosecco Superiore (Veneto).
The Fattoria Conca d'Oro is flagship winery for prosecco, a light and low-percentage sparkling wine that is characterised by a second fermentation in stainless steel tanks, rather than in the bottle. This is a traditional Veneto method that has been passed down from generation to generation.
Conca d'Oro Valdobbiadene Prosecco Brut comes from vineyards planted in the hills between Conegliano and Valdobbiadene, in the heart of the Italian prosecco trail (Veneto). Privileged hills that enjoy a microclimate that is perfect for vineyard cultivation thanks to being between the Eastern Alps and the Adriatic Sea. Through conventional agriculture, the grapes are taken to the winery when they reach optimum ripeness.
Once the Conca d'Oro Valdobbiadene Prosecco Brut grapes are pressed, they undergo a first fermentation at a controlled temperature. When it reaches 5º it is stopped using cold stabilisation. Then a second fermentation is carried out in the same stainless steel tanks by adding sugar (less than 10-12 g / l) and selected yeasts. Then the wine, already sparkling, is filtered and bottled.
