In 1860, the Chivite wineries embarked on their inaugural export. A century later, in 1985, this milestone marked its 125th anniversary. The occasion was celebrated with the Colección 125, a selection of wines to which Chivite Colección 125 Blanco belongs.
Chivite Colección 125 Blanco is a single-varietal Chardonnay, aged in barrels, cultivated at the Legardeta estate in DO. Navarra, specifically in the Navarrese municipality of Villatuerta. This north-facing plot, situated at an altitude of 480 metres above sea level, rests on poor soils where clays and limestones intermingle in various proportions. These factors, combined with the Atlantic-continental climate, allow the Chardonnay to mature gradually, maintaining a good level of acidity and sugar.
Chivite Colección 125 Blanco is harvested manually and brought to the winery, where the bunches undergo a selection process before being destemmed. A cold maceration (lasting between six and eight hours), pressing (using a pneumatic press), and static settling (which helps clarify the must) are essential before fermentation, which will last approximately three weeks in stainless steel tanks. Finally, Chivite Colección 125 Blanco is racked into French oak barrels, where it will rest for about a year on its lees.
