Ca'n Verdura Supernova is a red wine made by the Ca'n Verdura Viticultors winery in Binissalem (Mallorca), D.O. Binissalem.
Ca'n Verdura Viticultors is the personal project that Tomeu Llabrés embarked on in 2012 in a small garage in Binissalem.
After training as an oenologist in Tarragona, learning all the secrets of the island's native varieties together with Francesc Grimalt and completing his training in Priorat, Tomeu found an old garage in Binissalem in which he was able to establish his small winery.
Ca'n Vegetable wines stand out due to their marked Mediterranean character, with a great varietal expression, especially in their single varietal forms of varieties that are native to the island, all produced from small vineyards in the area worked with minimal intervention, and with the utmost respect for the terroir and its landscape.
Ca'n Verdura Supernova is a wine made with Mantonegro from a vineyard with vines that are around 60 years old, planted on loamy clay soils.
The grapes are harvested manually and placed in 15-kg boxes. Fermentation takes place in stainless steel vats and in conical tubs at a controlled temperature, below 25° C, with a maceration period of 20 to 40 days. Once the skins are pressed, the wine is aged for 13 months in 500 litre French oak barrels and 2,000 litre fudres. Before being bottled, the wine is clarified and slightly filtered.
