Ars Collecta Grand Rosé belongs to the Brut Gran Reserva trilogy that Codoníu has brought to the market. A Limited Edition whose predominant variety is Pinot Noir.
The Ars Collecta de Codorníu collection was launched with the aim of displaying the experience and knowledge of a territory that has been cultivated for more than 500 years. To do so, with the help of its oenologist Bruno Colomer, plots have been chosen where the strain can achieve its maximum expression and obtain the best results.
Ars Collecta Grand Rosé is the result of the Pinot Noir and Trepat varieties grown in a continental climate and a Xarel·lo from a Mediterranean climate. Three emblematic varieties of the D.O. Cava that start being harvested at the beginning of August in the coolest hours of the night to avoid possible oxidations and fermentations in racking the grapes.
Once inside the winery, the must from the Ars Collecta Grand Rosé harvest is extracted by being gently pressed in a pneumatic press and fermented in small batches at 17ºC. After this first fermentation, a second fermentation is carried out in the depth of the cava for 35 months. Once ready, sediment deposited during all this time is removed by riddling and disgorging the bottle. Liqueur d’expedition is then added and the bottle is capped with a cork stopper.
Ars Collecta Grand Rosé consists of a clean Brut Gran Reserva with a fine and constant bubble in which you can perceive the elegant notes provided by the Pinot Noir variety with the smoothness of a long-aged cava.
