Ximénez-Spínola PX Añada is a marvellous sweet wine produced from the varietal, Pedro Ximénez by the winery Ximénez-Spínola in Marco de Jerez, under the specific appellation '100% Pedro Ximénez grape'.
This is a sweet wine produced from grapes of the varietal Pedro Ximénez, the grapes are left to dry out in the sun, a process to extract the maximum amount of sugar. All the sugar used in this wine is natural, originating from the grape, no other types of additives.
After the grapes are left to dry out by the sun for about a week, for every 100Kg of fresh grapes used, they only receive 30 litres of must from the raisins.
The obtained must is fermented in barrels before being passed in to process called criaderas and soleras, a traditional Spanish method.
An absolute jewel, they only make 12,000 units per year.
