Williams Colección de Añadas Fino Ecológico is a fortified wine crafted by Bodegas Williams & Humbert in Jerez de la Frontera (Cádiz) within the D.O. Jerez-Xérès-Sherry.
 

 

The history of Bodegas Williams & Humbert commenced nearly 130 years ago. Established in 1877 by Sir Alexander Williams and Arthur Humbert, they played a role in the creation of the Denomination of Origin Jerez-Xérès-Brandy, and today, the winery is acclaimed as one of the most prestigious producers worldwide.

Bodegas Williams & Humbert is situated within the triangle formed by Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda. This area is characterized by a unique microclimate shaped by the Guadalquivir and Guadalete rivers, referred to as the "Mesopotamian valley" of western Andalusia.

Currently, Williams & Humbert is the largest winery in Europe, and its distributor, Sovisur, distributes all its products along with wines from other denominations such as Rioja, Ribera del Duero, Rueda, and Rías Baixas.
 

 

Williams Colección de Añadas Fino Ecológico is a fino made with Palomino from organic vineyards in the Pago de Burujena, in Trebujena.

Following manual harvesting with grape selection in the vineyard, the must is obtained, which will ferment at 22°C. Fortified to 15.5% vol. alc. with organic alcohol, it is left undisturbed for the flor yeasts to develop the veil, thus initiating the biological ageing. This static ageing, not entering the soleras and criaderas system, is conducted for 3 years in 600-litre American oak barrels.
