A light pre-fermentation maceration is performed at 8ºC to extract the aromatic potential. Alcoholic fermentation in stainless steel vats at a controlled temperature of 22-24ºC, and maceration with the skins for 8 days with gentle pumping over. 25% undergo malolactic fermentation in new fine-grained French barrels and the rest in stainless steel vats. The wine is subsequently aged for 4 months with its lees in French oak barrels.Viña Zorzal Graciano
is an example of how the Graciano
variety adapts very well to hot climates, producing a wine with a good sensation of freshness due to the acidity it preserves.
