About Vassaltis Assyrtiko
Vassaltis Assyrtiko is a white wine on lees produced by the Greek winery Vassaltis in the PDO Santorini protected denomination with the native Assyrtiko variety.
Founded in 2010 on the volcanic island of Santorini (Greece) by Yannis Valambous, its name is inspired by the black volcanic rock with a high basalt content which covers the archipelago. The project began when Yannis returned to his native town to work the 5 hectares of family vineyard and recover the traditional Greek varieties under respectful agriculture with the environment.
Vassaltis Assyrtiko comes from old vineyards between 50 and 80 years old, planted in basalt soils with deposits of aeolian sand and 365 meters above sea level. The koulara method is practiced, which consists of building a kind of nest in the vine, serving to protect the grapes from strong winds and the summer sun. The yield is limited to 12hect/ ha and harvest is carried out manually.
In the winery, the Vassaltis Assyrtiko grapes are pressed as a whole bunch and the must obtained is fermented at low temperature and with selected yeasts for 21 days in stainless steel tanks. Finally, the wine stands on its lees for 6 months.
Vassaltis Assyrtiko is a white wine that originates in one of the places with the most known volcanic eruptions and whose terroirs are completely impregnated with basalt. An explosive white wine with a mineral character.
2018 | Vassaltis Assyrtiko 2018 is an aromatic white wine with fruity notes of citrus, white and yellow fruit. It also gives off grassy and flinty fragrances. On the palate it’s fresh, mineral and creamy. A full-bodied wine with lively acidity and a salty mineral finish. |
