Trimbach Riesling Selection Vieilles Vignes is a single-variety Riesling white wine from AOC Alsace made by the famous Trimbach winery.
Trimbach is a winery dating back to 1626 and located in the medieval city of Ribeauvillé. The Trimbach family has been at the helm for 13 generations and currently has over 15,000 hectares of vineyards, some 1,600 of which are classified as Grand Cru. Throughout their history they have produced fruity but structured, elegant, balanced and long-living wines. The wine is not aged in foudres or barrels but it always spends a few months or years aging in the bottle in the winery so it is at its best when it reaches the market.
The Trimbach Riesling Selection Vieilles Vignes vines are about 50 years old and from the Ribeauvillé area. The land has marl and limestone soil and the grapes are manually harvested as late as possible so that they are fully ripe and at their best in terms of flavour and complexity.
Once in the winery, the Trimbach Riesling Selection Vieilles Vignes grapes are gently pressed in a pneumatic press, then the must is cleaned and fermented in stainless steel tanks at a controlled temperature for about 3 or 4 weeks. Once fermented, and when the wine is dry and there are no sugars left, it is bottled without undergoing malolactic fermentation to preserve its full acidity and freshness as well as its aging potential.
