About Thymiopoulos Rosé de Xinomavro

Thymiopoulos Rosé de Xinomavro is an ecological and biodynamic rosé wine made with the Xinomavro variety and produced by Apostolos Thymiopoulos in Macedonia (Greece) within the PDO Naoussa denomination.
 
The Thymiopoulos family has been cultivating their vineyards for several generations in the most respectful and sustainable way possible. But when Apostolos Thymiopoulos returned from the University of Oenology, he began managing the project and stopped selling their grapes to other wineries and started making his own wines. As a result, he produces native wines using natural and organic treatments in the vineyard and minimal intervention in the winery. 
 
Thymiopoulos Rosé de Xinomavro comes from several plots of young vines in the town of Fytia, in the Naoussa region of Central Macedonia. The vines lie about 450-650 metres above sea level on soils composed of shale and granite. The area has a continental climate with significant temperature differences between day and night and cooling winds from the sea and the Vermio mountain. The vines are cultivated using organic agriculture with biodynamic treatments and the harvest is manual and late to make sure the grapes are properly ripe.
 
In the winery, the grapes are destemmed and macerated for 12 hours. Thymiopoulos Rosé de Xinomavro vinifies spontaneously with native yeasts in stainless steel tanks for 5 or 6 months. The wine is then aged in second-use, 500-litre oak barrels. 
 
The Thymiopoulos Rosé from Xinomavro rosé wine has similar aromas to an authentic Burgundy and the flavours of an unmistakable Barolo. All with the electrifying influence of the Mediterranean, of course. A rosé wine made by Dionysus himself.

2019 Thymiopoulos Rosé de Xinomavro 2019 is a fresh rosé wine with notes of small red fruits, notes of wild herbs and hints of vanilla. On the palate it is fresh, complete and balanced. A wine with integrated acidity, round tannins and a long and very pleasant aftertaste.
