Thymiopoulos Naoussa Alta is a biodynamic red wine made by Apostolos Thymiopoulos in the PDO Naoussa denomination, in Macedonia (Greece) with the Xinomavro
variety.
Apostolos Thymiopoulos is a winemaker who, right after finishing his studies in oenology, took on the family winery and decided to stop selling grapes to make his own wines. A leading ambassador of the native Xinomavro variety, he produces Mediterranean wines from organic vineyards using minimal intervention.
Thymiopoulos Naoussa Alta comes from the highest plots, lying 450-650 metres above sea level and with a cool climate. These are 25-year-old vines planted on shale and granite soils. The grapes are organically cultivating using biodynamic treatments. The harvest is carried out manually and late to allow the grapes to fully ripen.
In the winery, the Thymiopoulos Naoussa Alta grapes macerate for 18 days with a small percentage in whole bunches. Fermentation takes place spontaneously with native yeasts for 1 to 3 months. The wine is then aged in large French oak vats.
