About Saxenburg Private Collection Sauvignon Blanc

One represents heart and passion. Another, the mind; and the last, the soul (the perfect bridge to unite the other two). The philosophy of Saxenburg in Stellenbosch (South Africa) is based on these principles.

Knowing this, it’s easier to understand why the labels of their wines show three guinea fowl, an animal native to this country which roams freely on this farm owned by the Bührers. There, since 1989, this German family has been cultivating the vineyards between False Bay and Table Bay, where different red varieties (such as Pinotage, Cabernet Sauvignon, Syrah) and white varieties(Chardonnay, Sauvignon Blanc) are grown. Of the latter, Saxenburg Private Collection Sauvignon Blanc stands out, a wine part of a collection which aims to represent the strengths of this estate.

Saxenburg Private Collection Sauvignon Blanc comes from a vineyard planted in the southwest, in the lower part of the slopes (where the soil consists of decomposed granite and clay), where the heat facilitates the ripening of the grapes. In this place the grapes are harvested by machine, during the morning (taking advantage of the coolness). When Saxenburg Private Collection Sauvignon Blanc grapes enter the winery, they are destemmed and macerated for a long time. After several days, cold fermentation will start thanks to the use of selected varieties of yeast. The final touch for Saxenburg Private Collection Sauvignon Blanc will come from oak barrels, where it will mature for 4 months on its lees.
