Saint Etienne Les Abelhas is an organic white wine on lees made by Saint Etienne with the Roussanne variety in AOC Côtes du Rhône, in the Rhône (France).
Domaine Saint Etienne is a winery located in the heart of the Rhone Valley. A winemaking project which has been producing wines for over 100 years and which has become a benchmark for French wines today, in the figure of Michel Chapoutier. Saint Etienne Les Abelhas comes from vineyards located in Montfrin, between Avignon and Nîmes, where the soils are composed of red clay and siliceous stones. Organic and sustainable agriculture is practiced, with organic certification since 2013. Once the grapes have reached their optimum ripeness, they are harvested first thing in the morning to maintain the freshness and aromas of the fruit.
In the cellar, whole bunches of Saint Etienne Les Abelhas are pressed and the must obtained is kept cold for 24 hours. Then spontaneous alcoholic fermentation begins with native yeasts in stainless steel tanks with regular batonnage. The wine is then aged for 7 to 10 months in these same tanks.
