This new company was built on the foundations already laid by Dom Thierry Ruinart, a Benedictine monk who, when he visited the court of Louis XIV, discovered a new “wine with bubbles” that excited the young aristocracy. This is the history behind these high quality champagnes, one of which is Ruinart Blanc de Blancs Brut.
Born in the Grand Cru vineyards of the Côte des Blancs and Montagne de Reims, Ruinart Blanc de Blancs Brut is made entirely from the best Chardonnay grapes from the best vintages. This is due to its latitude (higher than any other region) and its position (very close to the sea), as well as the Atlantic climate, cloud cover and balanced seasons. The rest is down to the clay soil, which is characteristic of the area, where the drainage allows the vines to retain the water they need. It is precisely this soil that is also the secret of the aging process these sparkling wines go through, thanks to the crayères, or underground cellars dug into the earth itself. These places are the true soul of the winery, providing the right light and temperature conditions to achieve excellence during the Ruinart Blanc de Blancs Brut aging process.
As for the vinification, the Ruinart Blanc de Blancs Brut must is extracted slowly and carefully to maximize the aromas of the grapes. This must is transferred to stainless steel tanks, where it will ferment at a controlled temperature. This first fermentation will be followed by malolactic fermentation, which lowers the acidity. After blending with Chardonnay from various years (20 to 25% are reserve wines from the previous 2 years), the rest of the Ruinart Blanc de Blancs Brut process takes place on wooden planks, where the bottles are arranged following the ancient method known as entreillage or stacking. After a second fermentation in the bottle, and an average of 10 years in the bottle, Ruinart Blanc de Blancs Brut becomes a great champagne that develops a great richness and aromatic complexity.
