Remordimiento blanco is a barrel-fermented organic white wine made by Bodegas Cerrón with the Chardonnay variety in the D.O. Jumilla, in the Murcia region (Spain).
Bodegas Cerrón is a small family project that was set up in 2004 in the municipality of Fuente-Álamo (Albacete) with the aim of preserving the La Calera winemaking tradition that has existed since 1895. To do this, they have protected and recovered the existing vineyards on the mountain slopes and used the grapes to produce fresh, smooth and very Mediterranean wines.
Remordimiento blanco comes from a 4-hectare vineyard planted in 1989 on very limestone and stony soils. These vines are 30 years old on average and lie about 840 metres above sea level. They are cultivated using ecological agriculture with organic treatments and the harvest is carried out manually at the optimum point of ripeness.
In the winery, the Remordimiento blanco grapes are cold pressed with the stems and the resulting must spontaneously ferments with native yeasts in stainless steel tanks. The wine is then aged on its lees in 700-litre French and Hungarian oak barrels for 4 months.
Remordimiento blanco is a citrus and glyceric drink. A Chardonnay full of fruity fragrances that you can enjoy now or keep for 8-10 years.
