About Paul Cluver Estate Sauvignon Blanc
Paul Cluver Estate Sauvignon Blanc is a white wine coupage of the Sauvignon Blanc and Semillon varieties produced by the Paul Cluver winery in the Western Cape South Coast denomination, South Africa.
Paul Cluver Estate Sauvignon Blanc is made with clusters that come from plots aged between 14 and 25 years old, with predominantly Bokkeveld shale soils and lying on south- and southeast-facing slopes at around 280 to 480 metres above sea level.
The grapes ferment in contact with their skins to enhance the extraction of flavours and reduce acidity. They are gently pressed and the resulting must is fermented with a lees stirring regime, which adds richness to the final wine. Some of the Semillon variety ferments in stainless steel tanks with the rest in French oak barrels of third and fourth use, as well as in a 2600-litre oak vat.
Paul Cluver Estate is a century-old family winery that spreads across an area equivalent to a third of the size of Manhattan, however more than half of the area is protected by UNESCO for wildlife conservation. The estate also includes housing for employees.
Paul Cluver Estate is a leader in the preservation of land and wildlife. The estate benefits from the local weather conditions and is a place where Burgundy varieties like Chardonnay and Pinot Noir, together with the Riesling variety have found an ideal terroir to really shine in the wines made here.
