Nicolas Maillart Champagne Grand Cru Brut Rosé is a mature, overflowing sparkling wine with a deep pink colour. The nose is powerful and expressive, with a predominantly fruity character with red fruits, apple, pears, plums and fresh bread. The palate is full-bodied, with great length, freshness and finesse. Meaty and enveloping, with a big fruity core and a very savoury and spicy acidity. Long and persistent finish.
At the moment he is one of the most brilliant winegrowers in the A.O.C. Champagne and, although he has already shown what he is capable of, he still has more up his sleeve.
In the meantime, we can enjoy Nicolas Maillart Champagne Grand Cru Brut Rosé, a sparkling rosé coupage of Pinot Noir and Chardonnay grown in Bouzy, a small village in the Montagne de Reims, in the north of the region. This is where Nicolas Maillart cultivates his vineyards in plots classified as Premier and Grand Cru, planted in the middle of the hillside, facing in a good direction. After so many years (the Maillart family has been involved in viticulture since 1753), Nicolas Maillart understands the vines extremely well, and has had the courage to convert his vineyards to organic cultivation. In fact, respect and balance are the two principles this winegrower holds to for his work in the vineyard, with the ultimate goal of optimising quality.
To make Nicolas Maillart Champagne Grand Cru Brut Rosé, the clusters grow in the best plots and in old vineyards. After the grapes are harvested by hand very early in the morning, the bunches are selected and transferred to the winery where they will be macerated. The Pinot Noir and Chardonnay are vinified separately. It is during this step, where the must comes into contact with the grape skins for a time, that Nicolas Maillart Champagne Grand Cru Brut Rosé achieves its wonderful and attractive pink colour. Following alcoholic fermentation (which happens slowly) Nicolas Maillart Champagne Grand Cru Brut Rosé is bottled without filtering or clarifying (just with a minimum dose of sulphites) and is then racked, resting there until it undergoes secondary fermentation. In fact, if Nicolas Maillart is known for one thing, it is for the long aging that characterises his wines.
