Nicolas Carmarans Mauvais Temps is a natural and organic, barrel-aged red wine made by Nicolas Carmarans in Occitania (France) with the Cabernet Franc, Fer Servadou and Negret varieties.
Owner of the charming Paris wine bar “Café de la Nouvelle Mairie” Nicolas Carmarans left it all behind and moved to Occitania to start making his own wines. He makes natural wines using native varieties as part of Aveyron’s local IGP denomination. The results of his work are pure, elegant and very deep wines.
Nicolas Carmarans Mauvais Temps comes from a very steep vineyard lying on narrow terraces and covered with wild plants. The location is an impressive valley near the town of Campouriez where the Cabernet Franc, Fer Servadou and Negret varieties are organically cultivated. The grapes are harvested manually.
When the Nicolas Carmarans Mauvais Temps grapes reach the winery, they are vinified through semi-carbonic maceration in 15 hectolitre conical wooden tanks for 20 days. The wine is then transferred to old barrels for about 12 months.
Nicolas Carmarans Mauvais Temps is a light, lively and delicious wine. A very exciting red from Occitania.
