




Muster Sauvignon vom Opok is a natural, ecological and biodynamic white wine made in Weinland Österreich, Steiermark (Austria) by Sepp & Maria Muster with the Sauvignon Blanc variety.
Maria and Sepp Muster, pioneers in biodynamic viticulture, began their project in 2000 on 10 hectares of family land in the Austrian town of Styria, on the border with Slovenia. Three years later, all the vineyards were awarded biodynamic certification and their wines are known for being lively and structured with a great mineral character.
Muster Sauvignon vom Opok comes from 15-year-old vines. These are strains planted in the typical local “opok” soil which consists of limestone and clayey silt terroirs. Biodynamic agriculture is used, alongside organic treatments and always following the astronomical calendar. The yield is limited to 4,000 kilograms per hectare and the harvest is manual.
In the winery, the Muster Sauvignon vom Opok grapes are firstly destemmed and then fermented in 2,400-litre oval wooden barrels with native yeasts. A small amount of sulphur is added to the wine after the first racking of around 10 months. Finally, it spends 20 months aging in 1,200 and 2,400 litre wooden barrels. It is bottled without being clarified, filtered or adding sulphites.
Muster Sauvignon vom Opok 2017 is an unusual Sauvignon Blanc that starts life between the sky and the earth. A biodynamic white wine with beautiful minerality and good acidity.
