In the case of Mas Doix 1902 Tossal d'en Bou Gran Vinya Classificada, what makes it so distinctive—as its name suggests—are its centenary vines, over 115 years old, planted in 1902 in the Tossal d’en Bou, a site in the village of Poboleda, in Tarragona. Here, the terrain is characterized by steep slopes, ranging between 350 and 450 meters in elevation, with an abundance of slate and llicorella soils. This particular base, with excellent drainage capacity, does not readily provide the water the vines desperately need, forcing them to extend their roots deep into the earth. The continental influence of this area partly mitigates this situation, helping to cool the hot, dry summers. In fact, the yields are not very high, averaging 300 grams per vine; however, in this case, the low quantity is synonymous with quality, achieving great concentration that translates into an unparalleled wine in the cellar.

This will not be the only scrutiny this red wine undergoes, as it will be inspected two more times before fermentation. Once before de-stemming and then again, grape by grape, on the sorting table.
