About Canopy Malpaso Tinto Syrah
Malpaso is a red wine from Méntrida made by Bodegas Canopy, a young winery that practices minimally interventionist organic farming, which allows wines with great expression to be cultivated on silicon-granitic soils.
The climate in this area is extreme and continental, characterized by long, cold winters, somewhat tempered by the Sierra de Gredos which acts as a natural barrier against the cold winds from the north and west. Summers are hot and very little rainfall. The large seasonal temperature variation is perfect for ripening grapes. This wine is a varietal Syrah (100%) from 10 hectares of vineyards 15 years old. The vineyards are planted on trellises and sandy soils of granitic origin. In terms of processing, a cold maceration is carried out after the grapes are stemmed. Subsequently, the wine undergoes a fermentation within its container for 15 days. Finally, Malpaso spends 8 months in French oak barrels of 500 litres, 50% new and 50% formerly used by a single wine.
