When we say the word trilogy, we are generally talking about a set of three artistic works that are connected to each other. Applied to the world of winemaking, the trilogy from the renowned winemaker from the Jerez area Luis Pérez Rodríguez, includes three wines from three different vineyards where the Tintilla de Rota native variety is the protagonist. Corchuelo, Balbaína and Carrascal are the chosen vineyards and thanks to the composition of the soil and the influence of the sea breeze, the grapes express themselves in each of them in very different ways. A tribute to a variety that was in danger of extinction and that, thanks to winegrowers committed to the VT Cádiz, has now found itself with the reputation it deserves. Luis Pérez Rodríguez, professor at the University of Cádiz and former Director of Research at Domecq, is one of the most committed figures in carrying out this recovery and makes three signature wines where the main protagonist is the Tintilla.
His Luis Pérez Tintilla Balbaina wine comes from the vineyard that the Pérez family owns closest to the Atlantic. These are Tintilla de Rota vines with a small amount of Palomino whose typical albariza soils give it a mineral character. After a manual harvest at night, the grapes (40% destemmed) are fermented in stainless steel tanks and open barrels for about 30 days. The wine is then aged for 12 months in sixth-use barrels and, finally, is transferred to a tank for a couple of months before bottling.
