About Lirondo
Lirondo is a natural white wine crafted from the verdejo variety in V.T. Castilla-León at the Isaac Cantalapiedra winery.
In the municipality of La Seca (Valladolid), nestled in the heart of the renowned Denomination of Origin for the verdejo variety, Rueda, Manuel Cantalapiedra and his father Isaac embarked on a family venture in 2014. This initiative cultivates 21 hectares of vineyards organically and produces wines with minimal intervention. In other words, contrary to the commercial demands that have popularised the verdejo variety, this winery seeks the pure expression of the variety and the terroir.
The vineyards of Lirondo are particularly notable for being part of the "Las Escuclillas" plot, which has ideal conditions for cultivating the verdejo variety. Old vines planted in silty soil and pebbles at an altitude of 750 metres above sea level, under a severely continental climate with stark thermal contrasts between day and night. 100% organic farming is practised with the application of biodynamic treatments that protect the terroir's balance and prevent potential diseases. Harvesting is done manually at the optimal moment of ripeness.
When the grapes of Lirondo enter the winery, they are destemmed and gently pressed. After spending 12 hours in contact with the skins, they ferment in stainless steel tanks with native yeasts and spend 8 months on their lees. Finally, it is bottled without clarification, filtration, or added sulphur.
Lirondo represents the solo project of Manuel, the son of Isaac Cantalapiedra, who, in pursuit of the intrinsic qualities of the variety, crafts an unorthodox verdejo without interference, electrifyingly fresh.
