Tao Te Ching, the foundation of philosophical Taoism, was written 25 centuries ago by the philosopher Lao Tse. This philosopher thought that the best way to live was to synchronise with the flow of nature and the cosmos. We don't know if Gianmarco Antonuzzi and Clémentine Bouveron share this philosophy, but when you discover their wines you realise that they are masterfully crafted with minimal intervention, letting nature take its course and adapting to all the changes. It all started when they met in Alsace, got married and decided to set up their own project, Le Coste, in the Gianmarco’s hometown near Rome, in Lazio. They have a total of 14 hectares growing vineyards, olive trees, chestnut trees, grains and oak trees all together and they work to recover vineyards and traditions. And they have achieved just that with wines like this Le Coste Pinotto.
Made from two young plots planted on volcanic soils at about 470 metres above sea level, Le Coste Pinotto is a blend of mainly Pinot Noir and a small amount of Syrah. The vineyard is cared for in the most natural way, responding to the needs of each plant and using 100% organic treatments. Once the grapes have reached optimum ripeness, they are taken to the winery in the village of Gradoli, where they undergo carbonic maceration for a month in old barrels with the grapes in whole bunches. After fermenting with native yeasts, the wine is aged for 12 months in oak vats on its fine lees. Finally it is bottled and stays in the winery for a while before being released for sale.
Influenced by the great French masters of carbonic maceration, Gianmarco and Clémentine show how well they have mastered this technique in their Le Coste Pinotto wine. A deliciously weightless wine, made by letting nature take its course.
